Fishing Knives
Selecting the right knife for the job makes bait preparation and fish cleaning safe and easy. With the help of the folks from Dexter-Russell we took the time to prepare this page.  The following are our suggestions of the right knives for every task in our region. 
 
The "SG" code in front of the knife model# stands for Softgrip which pertains to the handle style.  The Softgrip knives are all stain free.  The knives without this designation are more traditional carbon steel knives.  They require more maintenance to keep clean, but are very easy to sharpen and hold a great edge.  We particularly like the Softgrip knives on the boat, but often times prefer the more traditional knives in the kitchen.
Task Some suggested models  
Strip Bait Preparation - Preparing strip baits from squid or clams or cross cutting shrimp or small fish.  Small 3-4" serrated knives are easy to store and handle.

S151SC - 3.5" net/utility knife (stain free)
Chunk Bait and Chum Prep - Cutting bunker, mackerel, herring, butterfish, and other similar fish either fresh or partially frozen.  Serrated blades from 6-9" in length are perfect for these tasks.

SG142-8TE - 8" tiger edge slicer (stain free)
Flatfish Filleting - Cleaning fluke (summer flounder), small halibut, winter flounder, and other flatfish.  Narrow/flexible 7-9" blades allow these knives to easily slide over the bones of smaller fish.  These blades are available in stain free or more traditional carbon steel.
SG133-8 - 8" narrow fillet (stain free)
2333-9 - 9" narrow fillet (carbon steel/wood handle)
Medium Fish Cleaning - Cleaning stripers, bluefish, weakfish, blackfish, sea bass, cod, and other similar mid-water fish and bottom fish.  These knives are stiff enough to allow for a sweeping cut.

1378-9 - 9" wide stiff boning knife (carbon steel/wood handle)
Big Fish Cleaning - Tuna, swordfish, mako sharks, thresher shark, and other fish where steaks are desired.
